The Pacific Northwest white fish at it's best: wild halibut cheeks! A one time guarded secret coveted by fishermen, the cheek harbors the sweetest flavor and a different consistency than the main body. The cheek doesn't flake as much as string off, but those strings just melt in your mouth! Best seared quickly with butter (and garlic!), but the versatility is truly endless! Our cheeks are hand packed fresh, carefully vacuum sealed, and flash frozen at our Ferndale location in 1 lb packages.
